My husband Ken started treatment for non-Hodgkin's lymphoma in the Sring of 2003. With Ken's one-year mark approaching from a successful round of treatment, we had something to celebrate. However an unthinkable chain of events was about to unfold.

Our daugther Susan, a senior at Auburn University, came home to visit only to find a suspicious lump in her neck. Surely this could not be? Susan was named for my sister, Sue, who fought against Hodgkin's disease at the same age. Sadly, my family lost her at the age of 28. But yes, after months of testing, our daughter was diagnosed with Hodgkin's disease a week before graduation. We are grateful a present day diagnosis resulted in a cure.

How can I smile? By finding a way to bring happiness to others. As I sat in the treatment center and watched countless cancer patients, I thought, there has to be something I can do. Turning to what I know best, baking, I developed the ultimate gingersnap; a cookie filled with old-fashioned spices, deep, dark molasses, and sparkling sugar crystals. Ginger not only adds spice a flavor, it has been used for centuries as a medicinal remedy to calm an upset stomach.
